Who’s making a splash with seafood?

What’s new at Rooney’s Oceanfront Restaurant, 100 Ocean Ave., North Long Branch? A brand, spankin’ new executive chef: Thomas Schoborg.

Jersey Shore Restaurant Week will incorporate some of Schoborg’s flair, but his style will have a greater impact in the 2015 season, says general manager Darrell Wordelmann. Schoborg will have full control of Rooney’s specials and fresh fish boards.

Schoborg is from New York City and Washington D.C., and attended the International Culinary Center in New York. A first dish he will be adding to Rooney’s menu is a pecan-crusted rainbow trout with Brussels sprouts and applewood bacon with a bourbon bacon glaze. Schoborg also will partake in the Long Branch Chef Challenge Nov. 3 at the Ocean Place Resort and Spa in Long Branch.

Rooney’s Oceanfront Restaurant is celebrating its 20-year anniversary in June 2015, Wordelmann says, adding he believes the restaurant is the longest staple on the ocean.
